Dinner

Ok. So I follow a lot of food blogs and read a lot of cookbooks. My family is very much a foodie family. So last Thursday I finally got the chance and the interest at the same time as I had the time and the patience. Which resulted in me actually making a dinner with two of the recipes that I flagged to try. So I decided to write up my experience with my pictures.

I decided the meal would consist of three things. Main, Side and Dessert.

MAIN

I have been avoiding pasta lately. So when I saw this recipe I had to try it. I found this recipe from a great blog Busy in Brooklyn. It’s called Cheesy Stuffed Mini Peppers. It’s a classic shells recipe except that the shells are replaced with mini peppers.

It was really good. There were only two things to note.  One is that I had some extra cheese mixture left over. The second was that it was a little liquidy. So when I enjoy the leftovers this week I will make rice to go with it.

SIDE

Originally I was going to make a recipe which intrigued me. It’s a recipe for parsnip fries. But I was met with resistance as parsnips are not so favored in my home. So I decided to save that recipe for another time and use up the leftover potatoes I had to make home fries, a classic in my house. It’s basically pan fried onions and potatoes  sometimes I throw in some cheese but the main was very cheesy and I wanted a plainer starch to balance out the meal.

DESSERT

Dessert was another recipe that caught my eye. This was from a healthy food blog that I really like called Healthy Food for Living. It is an apple crumb made single serving. So I made three portions of it.

This was a really nice way to end a meal. I will definitely make this again.

Overall I would say the meal was a success. The only thing that I would change would be to switch the home fries for some rice. Other than that I really enjoyed it.
