Meal Three: Sumac Chicken with Quinoa Tabbouleh and Roasted Spiced Chickpeas

This meal was done very differently. First of all, as with the second meal, we had frozen the protein and kept the Odds and Ends in the fridge until this week. Sadly, unlike with the second meal, some of the ingredients for the third meal went bad. This is completely not the fault of Kitchn Synch as they say clearly that the ingredient freshness is intended for a one week window. In other words, they send the ingredients to you on Monday and the ingredients are supposed to stay fresh until the end of the week. So we had to leave out one ingredient and replace two others, this will be noted below, the ingredient freshness grade has been removed for the same reason.

Second, we made the meal at night and ate a bite to check the taste and then we packed it up for lunch the next day. So here I will add a grade of for the fact that the meal had amazing staying power, it still tasted great cold the next day. But I’m getting ahead of myself. So, back to the beginning.

Sunday night, N and I made the third meal for week two from Kitchn Synch, Sumac Chicken with Quinoa Tabbouleh and Roasted Spiced Chickpeas.

We started out with our protein:

2 Boneless, Skinless Chicken Breasts

And our oil:

EVOO

We opened up the Odds and Ends package to find:

1 package Chickpeas — replaced with canned chickpeas

1 package Cherry Tomatoes — replaced with small tomatoes, cut into chunks and lightly drained

1 Cucumber — left out

1 Lemon

1 bag Quinoa

1 bag Scallions

1 bag Parsley

1 container Dijon Mustard

1 clove Garlic

1 bag Cumin

1 bag Chili Powder

1 bag Sumac

1 bag Salt

The meal didn’t require any fancy techniques but did require two pots, a bowl and a baking sheet. The chickpeas were quickly prepped and popped into the oven while we made the quinoa and chicken.

Ease of Cooking: B

The longest part of the recipe was the chickpeas which just needed some time in the oven. The total recipe took around a half hour.

Speed of Cooking: A

The recipe was very clear. An added bonus was the explanation for rinsing the quinoa which I never understood before.

Recipe Instruction: A

This recipe was very good. The quinoa was really delicious! This was the best quinoa that N or I have ever had. The chicken was a little dry but that was due to our difficulty with pounding it thin, which in future will be easier as we bought a new meat tenderizer.

Taste: A

Both N and I were full after this meal.

There were no specialty ingredients so we could easily make this again. We are definitely going to do the quinoa again as it was super easy and delicious! We also want to try the chicken again, I had never had sumac before but I found it quite tasty and want to see how the chicken will be when pounded properly so that it stays moist.

Overall we were very satisfied with this meal!
