Easy Tomato and Rice in a Rice Cooker

There is a recipe that has been going around on the internet that caught N’s eye. So we had to try it. It wa delicious! And so simple!

Ingredients:

  • 2 cups rice
  • Water
  • 2 tsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper (finely ground)
  • One large ripe Tomato

Put the rice in the rice cooker add the olive oil, salt and pepper and the necessary water according to the rice cooker instructions. Place the tomato on top. Cook the rice in the cooker. Mix the tomato with the rice. Enjoy!

This is the original simple and delicious version of the recipe. A few things to note,

1. The tomato needs to be ripe to properly burst with juice over the rice, it also ensures a fuller flavor. N and I had a slightly underripe tomato. While the dish was still delicious, the tomato lacked flavor and was therefore a little flat in taste.

2. N and I used our regular pepper mill with a much larger grind. This resulted in uneven pepperiness throughout the dish, some bites had a super fiery pepper bite and others were lacking a bit in taste. A finer grind for the pepper will ensure that the taste is more consistent.

Even with these minor issues we both loved the dish. We have so many ideas for future versions especially since many people who have this recipe do it this way and then add other ingredients to vary the dish and make it more unique. Any vegetables that steam well can be added and the possibilities are endless.
