Taiwanese 3 Cup Chicken

N has found a couple of Asian food channels on YouTube. We have been watching them for a week or so and tonight we tried one of the recipes. Both channels, links here and here, had a version of the same recipe, Taiwanese 3 Cup Chicken. So N combined the two to create his own version of the dish.

Ingredients

  • 1 1/2 lb bone in Chicken drumsticks
  • 1/3 cup Toasted Sesame oil
  • 1/3 cup Soy sauce
  • 1/3 cup Mirin
  • 2 tsp Sugar
  • 1 tsp Chili flakes
  • 12 Garlic cloves
  • 10 pieces of Ginger, thinly sliced
  • 5-6 Scallions, green part
  • bunch of fresh Basil

Method

Cut the chicken off the bones and cut into small pieces. Combine the toasted sesame oil, sugar, mirin and chili flakes in a small bowl. Heat pan over medium high heat. Add some olive oil to coat the pan. Sauté the ginger and garlic for around a minute until fragrant. Add the chicken to the pan and brown for around 5 minutes. Add the sesame oil mixture to the pan and stir to combine. Let sit stirring occasionally for 20 minutes until the sauce has thickened. Stir to coat chicken. Add basil and scallions, stir to combine and serve over rice. Enjoy!
