The Essential Instant Pot Cookbook

The Essential Instant Pot Cookbook available on Amazon.com, is a cookbook for “Fresh and Foolproof Recipes for Your Electric Pressure Cooker.” As a new Instant Pot owner, I was excited for a good cookbook that would provide me with guidelines and great recipes to make the most of my new cooking tool.

I made the Arroz con Pollo, which is chicken and rice. Now, I am unsure if it was just this recipe, or if I did something wrong, but it was not good. It called for chicken breast, instead of chicken thighs as most Arroz con Pollo recipes use. Sadly it resulted in extremely dry chicken that was almost impossible to eat. The rice was tasty but it was overpowered by the disgustingly dry chicken. The dish was barely edible the first time, and the leftovers had to be thrown out. I was very disappointed.

The cookbook has some great info about cooking with an Instant Pot. And some of the other recipes look interesting. I will give another recipe a try and hope that the Arroz con Pollo is an anomaly.
