Cinnamon Overnight Oats

Another fun breakfast we have been making this week is overnight oats. Not only is it easy and delicious, but they work great in our new parfait cups! We prepare the overnight oats the night before, and then put them in the cups the next morning with some yogurt in the insert. This gives us a great breakfast to take and enjoy at work.

Just like parfait, overnight oats are extremely flexible. It is quick and easy to prepare as long as you remember to do it the night before. There are so many delicious combinations that you can make.

Cinnamon Overnight Oats

Ingredients
  • 1 1/4 Cup Rolled Oats
  • 1 Cup Unsweetened Almond Milk
  • 1 Tbsp Maple Syrup
  • 1 Tsp Cinnamon
  • 1/4 Tsp Vanilla Extract
  • 2 Bananas, chopped
  • 1/4 Cup Yogurt
Instructions

In a medium bowl mix all ingredients except the banana or yogurt.

Mix until fully combined.

Cover and place in refrigerator overnight. The next morning, spoon into cup and top with bananas and yogurt. (N and I took the yogurt in the insert and cut the banana into the oats at work.)
