Black Bean Brownies

As I said in my post here, N and I have been eating healthier following the Mediterranean Diet for about four months now. We have been doing really well and enjoying it a lot!

A big questions that we had was what to do about dessert for Shabbos. So I looked online for Mediterranean Diet dessert recipes. I found many ideas but couldn’t find one that really spoke to me until I remembered that I had seen a black bean brownie recipe on a site I follow.

I made it that week with a few changes, and we fell in love with it. I have made it almost every week since then. Everyone we serve it to loves it and is so surprised to hear what is in it!

Black Bean Brownies

Ingredients

  • 1 15 oz can Black beans (drained and rinsed)
  • 2 Tbsp Cocoa powder
  • 1/2 cup Quick Oats (I use steel cut but regular work fine too)
  • 1/4 tsp Salt
  • 1/3 cup Maple syrup
  • 1/4 cup Coconut oil (melted)
  • 2 tsp Vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup Chocolate chips, plus more for the top if desired. (Any type can be used but I have found that semisweet makes a tastier brownie)

Instructions

Preheat the oven to 350 degrees F. Combine all of the ingredients except the chocolate chips in a Vitamix or food processor. Blend really well. Add the chocolate chips, mix to combine. Pour into a greased 8 x 8 pan. Sprinkle with additional chocolate chips if desired, I press them in a bit so it bakes better.

Bake for 15-18 minutes. These are delicious both warm and room temperature. Enjoy!
