Mother’s Day 2019

Hope everyone had a happy Mother’s Day! We had a wonderful day that started with a Mediterranean themed brunch. Our inspiration was this recipe, link here.

We had a large array of foods. Some from Costco, some made in the June oven and some that N made on the stove. We also had some Mediterranean flat breads.

From Costco we had Lox, Salmon spread, Tzatziki sauce, and our dessert of Baklava.

In the June oven we made the Falafel balls (the air fryer did a great job!), a lovely spring Frittata, and roasted Mushrooms.

N also made some Poached Eggs, Caramelized Onions and Scrambled Eggs.

All of the items were delicious and the meal was quite successful. We were very happy about that as we were worried about making a brunch that the family who is not on the Mediterranean diet would also enjoy. Thankfully everyone enjoyed the Mediterranean themed brunch!
