Meal One: Blackened Salmon with Mango Salad and Tangy Raspberry Vinaigrette

The other night N and I made the first meal from JChef, Blackened Salmon with Mango Salad and Tangy Raspberry Vinaigrette.

We started out with our protein:

We opened up the meal bag to find:

1 bag of Lettuce

1 Mango

1 Red Onion

1 bag of Cashews

1 bag of Seasoning

1 container of Raspberry Jam

1 container of White Vinegar

The ingredients were in great condition. The lettuce even had desiccant packets in with it to keep it fresh.

Ingredient Freshness: A

The meal didn’t require any fancy techniques.

Ease of Cooking: A

It was a very easy recipe taking approximately 10 minutes.

Speed of Cooking: A

The recipe instructions were clear and easy to follow.

Recipe Instruction: A

This recipe was tasty and we both enjoyed it. The mango was not quite ripe but was still tasty and a nice cooling element for the dish. The dressing was nice and tangy. However, the red onion really overpowered the  salad and made it quite sharp in taste. The salmon tasted very good but almost seemed to need a bit of extra salt. I also felt like the meal was a bit unbalanced and would have been greatly improved with a starch.

Taste: A-

Both N and I were a little hungry after this meal. We didn’t supplement the meal with anything and were both fine but I wish it had come with a starch to really balance it out and make sure we were full.

Filling: B-

The meal looked pretty close to the picture.

Looks like the Recipe: A

All of the ingredients were easily findable except for the seasoning. We have no idea what it was except so we would have to find another blackened salmon recipe to make the spice mixture. As it was the main flavor in the dish that makes this recipe hard to recreate. I would also greatly reduce the amount of red onion in the salad to improve the balance. And as I said above, I would add a starch. The meal really did not seem complete as it was.

Overall we were very happy with this meal.

Note: Salt and pepper and Olive Oil were not included in this meal kit so we used our own.
